I got this from an international cookbook when we lived in Indo:
Peanut Sauce:
2 T oil
1/4 C onion, finely chopped
2 cloves garlic, minced
1 t Sugar
1/2 t salt
1/4 t ground dried chili peppers or 8 small red peppers
2 t grated lemon rind
1/2 c peanut butter
3/4 c coconut milk
3/4 c water
Heat oil in skillet, saute onions & garlic 3 minutes, stir in peanut
butter, sugar, salt, chili peppers & lemon rind, very gradually
add coconut milk mixed w/ water. cool
salad:
lettuce or napa cabbage
1 c cooked sliced green beans
1 c shredded cabbage, cooked 5 minutes
2 tomatoes sliced
2 cucumbers peeled and sliced
bamboo shoots
1 small red onion, sliced and fried
shrimp chips (available in asian markets)
